my cooking - Garlic naan

Garlic naan is easy to prepare at home .........I always go to some North Indian restaurant to have naan,tandoori roti,etc.....I never knew how it was made .....but once I came to know I tried making at home...... so every one can make naan at home ..............

Ingredients
1.All purpose flour/Maida 2cups
2.Baking powder 1/2tsp.
3.Baking soda 1/2tsp.
4.Salt to taste
5.Yogurt 1tbsp.
6.Sugar 1tsp.
7.Milk 3/4cup
8.Coriander leaves chopped
9.Garlic chopped

                                                 Take a deep bowl and mix ingredients from 1-4 then to it add the ingredients 5-8 and knead well ..........the texture of the dough should be soft (as shown below) ........ close the bowl with a cloth and keep it aside for raising for about 30 - 60mins........
                                 After resting the dough make balls out of it (make sure your hand is rubbed with oil so that the dough don't stick to your hands)...then take each ball spread some oil and flaten it with your hands...... on top spread some garlic and press it (not necessary to be round).the naan mix need not be thin ..........now heat a flat pan and toast the naan mix on both the sides ..................when done again the naan has to be shown directly on the gas to swell ........ be sure not to let it burn .......naan is ready.........

my cooking - Vegetarian biriyani with maggie cubes

Vegetable biriyani with maggie cubes..............easy to make and tasty toooooooooooo .........It was a sunday and I was wondering what to make special for kids for their lunch ............I just opened my fridge found some vegetables ...then went to store room and their I found basmathi rice and in my masala box I had maggie cubes left so I thought of making a biriyani which I was not sure whether it would come out well .........but it did so try ...............

Ingredients
1.Basmathi rice 2 cups washed and soaked for 20mins
2.Carrot chopped 1 cup
3.Cabbage chopped 1 cup
4.Onion chopped 1 cup
5.Onion sliced 1 cup
6.Turmeric powder 1/2tsp
7.Cardamom/elaka 6nos.
8.Cloves/grambu 4-6nos.
9.Cinnamon/karuvapatta 1 finger size stick
10.Cumin seeds/Jeerakam 1tsp.
11.Star anise/Thakollam 1or 2nos.
12.Kus kus/poppy seed 1tsp.
13.Cashew 6-8nos.
14.Raisins 4-6nos.
15.Ghee 2 dessert spoon full
16.Dalda 1 dessert spoon full
17.Pineapple essence or biriyani essence 1 small tsp.
18.Lemon juice of 1 lemon
19.Maggie vegetable cube 1
20.Salt to taste

                                   Lets start .......take a deep rice pan and heat ghee and dalda leaving 2-3tblsps. each aside... you need them for frying onions and vegetables  ( I prefer Amul ghee its really tasty and has a nice sweet aroma)................ so into the hot ghee and dalda splatter kus kus, jeera,elaka,thakolam,patta,grambu ..............dont let it fry tooo much................ then to it add basumathi rice and fry it at medium flame...........(this helps the rice not to stick when it is boiled)........then add water to get the rice boiled ...(for 2 cups of rice add 3 cups of water...the water level should be above the rice)....... add salt and lemon juice.........  (the water should be little bit salty so that the rice gets necessary salt when it is boiled....lemon also helps the rice not to stick each other)............when the water starts to boil lower the flame and close the lid wait for 20-25mins......... In a seperate pan heat ghee and dalda that was kept aside and fry the sliced onions till golden brown and drain them from the ghee and keep it aside............(if ghee neede you can add) .....in that same ghee fry cashew and raisins and keep it aside .......then to it saute onions chopped till glassy appearance to it add turmeric powder then to it add carrots and saute for 5mins or till half cooked then to it add cabbage and saute till they are cooked............. to it add maggie vegetable cube...... (or chicken cube if needed).. and keep it aside ............when the rice is done to it add the cooked vegetables and mix it gently ...............and on top garnish with fried onions,cashew and raisons.......................Vegetable biriyani is ready........

Ingredients
1.Onion rings(thinly sliced) 2nos.
2.Curryleaves chopped 4nos.
3.Gram flour( Kadala podi) 1cup
4.Red chili powder (as per your spice)
5.Oil for frying

                             This snack is really so easy to make and your children will love to have it with ketchup..........so lets start ..........In a bowl mix gram flour and red chili powder nicely with water into thick paste (add water little by little while mixing).........to it add onions and curry leaves ...allow the onions to coat well with the thick batter ........meanwhile heat oil for frying in a deep pan ...if it is hot enough put the flame in medium and put the onion rings one by one into the hot oil and fry till golden brown .......when done serve with ketchup ..................try out and do comment............

my cooking - Pineapple pullissery

Pineapple pullissery curry is sweet & salty ............the sweetness of pineapple gives a different taste ......try this ...............

Ingredients
1.Pineapple diced (half of a pineapple)
2.Red chili powder 1/2tsp.
3.Turmeric powder 1/4tsp.
4.Green chili cut into halves 4nos.
5.Ginger sliced (half a lemon size)
6.Curry leaves 6nos.
7.Coconut grated (half of a coconut)
8.Jeerakam (jeera seeds) 1tsp.
9.Garlic pods 4nos.
10.Curd 2-3tbsp.
11.Mustard seeds 1/2tsp.
12.Dry red chili 4nos.
13.Oil
14.Salt to taste

                                     In a sauce pan mix ingredients from 1-6 with 1 and a half cup of water (if you find water is less for the pineapple to get cooked add some more) and boil it for 5mins or till the pineapple gets cooked...............using small blender or grinder blend ingredients from 7-10 nicely into thick paste and keep it aside ...............once your pineapple is cooked mix the coconut paste to it and mix well (you can add water if you need a loose consistency ) add salt to taste ........boil for 2-3mins and remove from the flame .............heat a small pan add oil and splatter mustard, dry red chili and curry leaves(optional) and spread over the curry .......pineapple pullissery is ready...........................

my cooking - veg sandwich without mayonnaise

Hai here is another veg sandwich without mayonnaise ...............some would not like to have mayonnaise b'coz  of the egg content so here I'm showing sandwich without mayonnaise ............children like to have it .........

Ingredients
1.Bread slices
2.Cheese slice (make the cheese slice long with a knife)or mozzarella cheese (pizza cheese grated)
3.Carrot 1no.(grated or finely chopped)
4.Cabbage chopped (same measurement as of the carrot)
5.Capsicum chopped (only half  the measurement of the carrot )
6.Onion chopped (half)
7.Pepper powder 1/2tsp.
8.Salt to taste
9.Ketchup
10.Date-tamarind chutney
11.Mint chutney
12.Butter

                                        In a deep bowl mix ingredients from 3-8 and keep it aside ............Place the bread on a flat surface and spread the cheese (leave gaps.... no need to put much of cheese) on top spread the vegetables and on top spread ketchup (just drop by drop) then the two chutneys.............. again spread the cheese close it with the other bread slice ........do the same process with the rest of the ingredients...........heat a flat pan to it spread the butter and toast your sandwich on both sides ...you can use your sandwich toaster to toast .....................      serve hot .....its easy to make in mornings for your children to take to school as their snack.................or have it as evening snack .....you can make many variations in your sandwich like you can add celery , sweet corn, tomatoes etc................. in sauces you can add chili hot sauce etc...........   try it make your children happy at times ..............................

my cooking - Honey chili french fries

Honey chili french fries ........something different from usual french fries ...............we buy the ready made packet of french fries and fry them for kids for their snacks................. but children do get bored having the same taste always .........................so here's something you can try at home french fries with a different taste try them your kids will like it ........

Ingredients
1.1 medium sized bowl of french fries
2.Red  chili paste or sauce 1/2tsp
3.Soya sauce 1/2tsp
4.Honey 1/2tsp
5.Vinegar 1/2tsp
6.Pepper powder 1/2tsp
7.1tsp corn flour mixed in 1tbsp of water

                                   French fries every mom knows how to make it so no explanation ................will go on to the next step..............In a small sauce pan mix all the ingredients for the sauce and cook on law flame until the sauce thickens..........remove from heat and let it cool...........just before serving pour the sauce over the french fries and toss until mixed ..........note once mixed you need to serve immediately other wise the french fries will get soggy it need to be crispy ......have it with ketchup or date tamarind chutney ..............have a nice time

Ingredients
1.Rava fried 2 cups
2.3 cups of water
3.Onion 2nos.finely chopped
4.Ginger 1 lemon size finely chopped
5.Green chili chopped 5-6nos.
6.Curry leaves 5-6nos.
7.Dry red chili 6nos.
8.Mustard seeds 1tsp.
9.Uluva half a tsp.
10.Turmeric powder half a tsp.
11.Salt to taste
12.Oil

                                  Heat a deep pan and to it pour Oil (3tbsp.) splatter mustard,uluva and dry red chili to it saute onion ginger green chili curry leaves.................... when onions turn pink add turmeric powder mix well .......then pour water and let it boil for about a minute........ add salt to taste (salt should taste a bit more )    ...........now slowly add rava (if the rava is not fried fry it it in a seperate pan before adding to water) and mix well lower the flame and mix it nicely till the water disappears .......mix for 2-3 mins .......then let it cool and then break the lumps nicely .....if needed heat it again before serving.............serve with green peas curry..................

easy to make veg sandwich........its hard for children to have vegetables all alone..... so this is an easy way to make your children have vegetables...............
Ingredients
1.Bread
2.Butter
3.Mayonnaise
4.Tomato ketchup
5.Cabbage finely chopped 1cup
6.Carrot finely chopped 1cup
7.Capsicum finely chopped half cup
8.Onion finely chopped half cup
9.Tomatoes finely chopped half cup
10.Pepper powder one fourth of a tsp
11.Salt to taste
12.Cheese slice
                                         In a bowl mix all the ingredients from 5-11............layer the bread and on one side spread mayonnaise and on the other piece of bread spread ketchup ...........then on the mayonnaise bread spread vegetables and layer with cheese and then close it with ketchup spread bread  .......... do the same with the left overs........after that heat a pan....... spread butter on the pan and toast the sandwiches  ........it is a good snack for your kids at school , at any other classes.................. try it for your kids..............

my cooking-Tuna peera

Tuna peera......... I tried making this when I was in Riyadh ...outside countries tuna is available...... lots and lots of tuna tins ................I do remember when we were in Jeddah Saudi my mother use to make a dish with tune which i liked to have with rice ....... ans so when I was Riyadh I tried out and it went well ......try this quite different and tasty toooooooooo .................

Ingredients
1.Tuna 2 tins
2.Onion finely sliced 2nos. large
3.Ginger 1 lemon size finely sliced
4.Green chili 6-8nos. cut into halfs
5.Curry leaves 5-6nos.
6.Coconut grated (one coconut)
7.Turmeric powder 1tsp.
8.Kudampulli 2 pieces
9.Salt to taste
10.Oil
11.Mustard seeds 1tsp(kadagu)
12.Fenugreek seeds 1/2 a tsp.(uluva)
13.Dry red chili 4nos.

                                   First separate the tuna and the oil from the tin............ maybe using your hands or using a fork (we do not need the oil) into a deep bowl and mix all the ingredients from 2-9............ tuna already contains salt so add only necessary salt to your mixture ............keep this mixture aside for 5-10mins.....heat oil (2tbsp) and splatter mustard ,fenugreek and dry red chili to it add the mixture saute it well and close the lid at low flame (you need to get the tuna cooked well) you will have to cook for about 10-15mins in between  give a mix gently (be sure not to catch at the bottom of your pan) .....while mixing if you find that the mixture is dry enough your tuna peera is ready ............goahead   have it with rice ...............

Potato pakoda ....4o'clock snack...........wow tasty and easy...

Ingredients
1.Potatoes Boiled and smashed 4nos.
2.Onions finely chopped 2 large nos.
3.Ginger half a lemon size chopped
4.Garlic 6nos. chopped
5.Curry leaves 6nos.
6.Green chili chopped 4nos.
7.Turmeric powder half a tsp.
8.Mustard seeds 1tsp.
9.Jeera seeds1&1/2 tsp
10.Salt to taste
11.Oil for frying
12.Gram flour to make the batter

                                Boil potatoes with its skin in a pressure cooker add necessary salt and boil at medium flame for 6 whistles ............. when the potatoes are done remove from hot water and peel the skin off and smash it using fork... keep it aside...............heat 2tbsp.oil in a pan and splatter mustard, jeera and curry leaves to it saute onion,ginger,garlic and green chili ..saute it till the onions appear to be glassy ...then at low flame add the turmeric powder mix it well ..........to it add the smashed potatoes and mix nicely by flattening the potatoes when mixed remove from fire and let it cool (if needed add salt) make small balls out of the potato mixture and keep it aside ....in deep bowl make a thick batter using gram flour,water and a pinch of salt  ....now heat oil in a deep pan and take one potato ball dip it in the batter (it should be well coated) and fry it in the oil .............fry how much you can in your deep pan ................cook it at medium flame and fry till golden brown serve with ketchup or tamarind-date chutney ............

Fish molli with karimeen ...actually.this recipe was just a try and it turned nice and I thought to share it with you so please try and do comment below ......  

Ingredients
1.Karimeen removed skin and cleaned and fried 4nos.
2.Coconut milk of 1 coconut grated
3.Onions thinly sliced 2 large nos.
4.Garlic 6nos. chopped
5.Ginger 1 lemon size chopped
6.Curry leaves 6nos.
7.Tomatoes thinly sliced 2nos.
8.Green chilies 4-6nos. cut into halves
9.Pepper powder 1tsp.
10.Turmeric powder 1tsp.
11.Cardamom 2nos.(optional)
12.Dry red chili 2nos.
13.Salt to taste
14.Oil

        How to fry Karimeen is in my blog do look into the recipe.......Using a blender blend the coconut grated with necessary water nicely and extract the thick milk and keep it aside ..using the same left over coconut again blend it with water and extract the thin milk keep them seperate aside .............................. now to make gravy heat oil in a deep pan and splatter cardamom,dry red chilies,curry leaves and then saute the onion,.garlic,ginger and green chilies for about 2-3mins till the onions turn glassy appearance (don't let the onions brown) to it add turmeric powder and pepper powder and mix well at low flame and the tomatoes and close the lid for a min (no need to smash the tomatoes) then to it pour the thin coconut milk and let it boil on high flame  ....when it starts boiling keep your flame at medium and let it boil for 5 mins.....then add the fried karimeen to it and boil for another 5mins.....add salt to taste.....after that add the thick milk and let it boil......you will find the oil formation on the curry that means your curry is done......have it with bread, appam, noolappam, and also with rice ...............have a try

Prawns roasted in sauces is really tasty and your children will like to have them ............
Ingredients
1.Prawns cleaned and fried1kg
2.Onion chopped 1no.
3.Ginger garlic paste 2tsp
4.Green chili 5nos.
5.Tomato chopped 1no
6.Turmeric powder 1/2tsp.
7.Red chili powder 1tsp.
8.Pepper powder 1tsp.
9.Garam masala 1tsp.
10.Tomato sauce 1tbsp.
11.Soy sauce 1tbsp.
12.Chili sauce 1tsp. (optional)
13.Salt to taste
14.Oil 2tbsp

                                   How to fry prawns is already shown in my blog.......in a deep pan heat oil and add onions saute it for a minute then add ginger garlic paste,green chili saute for another 1min and add the turmeric,red chili and pepper powder and mix well at low flame then add tomatoes mix and close the lid for 2 mins ....remove the lid and smash the tomatoes.... .add garam masala,tomato,soy and chili sauce mix well at medium flame add salt to taste (be careful while adding salt because the sauces already contain salt) to it add fried prawns mix well and your prawns roasted in sauce is ready

Chemeen fry ...so easy so tasty ...................

Ingredients
1.Shrimps (chemeen) remove the head part and clean it well -1kg
2.Turmeric 1/2tsp.
3.Red chili powder 1tsp.(add 1/2 more if needed more spicy)
4.Pepper powder 1tsp.
5.Coriander powder 1/2tsp
6.Juice of 1 lemon
7.Curry leaves5-6nos.
8.Salt to taste
9.Oil for frying

                         In a bowl mix all the ingredients(not the oil) mentioned above (taste of salt should stand a bit more so that the shrimps can suck necessary salt while resting) if needed add little water and keep aside for 1/2 an hour ..........heat oil in a deep pan and fry shrimps until nice crispy golden brown...... there chemeen fry ready..........

my cooking-Karimeen vazhaelleyil pollichadu

Karimeen pollichadu     ........try this one it will make your mouth water .......

Ingredients
1.Karimeen cleaned,scaled and removed the skin and fried 2-3nos.
2.Onion chopped 1
3.Shallots finely chopped 6nos.
4.Garlic 4-5nos. finely chopped
5.Ginger half lemon sized finely chopped
6.Curry leaves 5-6nos.
7.Green chilli finely chopped 4nos.
8.Turmeric powder 1/2tsp.
9.Red chilli powder 2tsp.(if neede to be spicy add 1/2tsp more)
10.Coriander powder 1tsp
11.Pepper powder 1tsp.
12.Tomatoes finely chopped 2nos.
13.Salt to taste
14.Oil 4tbsp.

                            I have already added how to make karimeen fry in my blog ....we will go to the next process of making karimeen pollichadu ....for that we must make the masala first ......so take a deep pan heat oil 2-3tbsp. to it add onions,shallots,garlic, ginger ,curry leaves,and green chilli and saute it for 2-3mins. (dont let the onions get brown need to be a glassy appearance)  when done add the masala powders at low flame mix it well for 1min..... then to it add tomatoes and close it for 2-3mins......... let the tomatoes get soft enough to smash .....open the lid and smash the tomatoes no need to add water....at medium flame saute them till you find the oil is seperating from the masala  ...remove from the flame ......now take the banana leaf and heat directly on the low flame for 1sec only to get the leaf soften and take one fried fish and place it on the leaf and spread the masala on both sides of the fish... close it well and do the same process with the remaining fish (if banana leaf is not available you can use foil)...take a pan and heat remaining oil and place the wrapped fish on medium flame ...if you find the leaf getting its colour changed turn over and cook till that side colour changes (if foil is used do this in your oven or your cooking range oven)......done Karimeen pollichadu ready ...

Karimeen fry ''''really simple and easy to do................try  ....

Ingredients
1.Karimeen cleaned, scaled and remove the skin (skin tastes really sour ) 4nos.
2.Shallots (cherulli small onions) 6nos. remove the skin
3.Garlic 4-5nos.
4.Ginger 1 small lemon sized
5.Curry leaves 5-6nos.
6.Turmeric powder 1/2tsp.
7.Red chilli powder 2&1/2tsp.(keep in mind you can add spice more if interested in really spicy)
8.Pepper powder 1tsp.
9.Coriander powder 1tsp.
10.Juice of 1 lemon
11.Salt to taste
12.Oil (for shallow fry)

                         Make slits on the fish so that the masala you make really enters into the fish.... to make the masala..... take a small grinder add the ingredients from 2-10 and grind it to make a fine paste if needed add little water (be careful the paste should not be watery)....now when the paste is done add salt to taste (taste of salt should stand out in the paste so that the fish can suck necessary salt ) apply them on the fish nicely with your hands and keep them aside for 1 hour (at least for half an hour) ....heat oil in a pan (the oil should be hot or else the fish gets caught on the pan) and fry them till nice golden brown.......... serve them as your side dish for you rice....... try  this and do comment

My cooking - Sweet bread porichadu

Sweet bread porichadu.........

Easy to make and a good snack for your kiddies..........

Ingredients
1. Maida 1cup
2. Milk 2cup
3. Sugar 4tbsp( if your sugar concerned less to 3tbsp )
4. Cardamom 6-8nos. grind ed and remove the skin off
5. Vanilla essence 2-3 drops
6. Soft bread 5-6pieces each cut into four squares
7. Oil for fry

                          In a bowl add ingredients from 1-5 one by one and mix them well with a blender...... the consistency should be thick ( like dosa -idli maavu  ) make sure the batter has enough sugar ( if the milk used is not enough add little water or milk if you like add 1 egg ) ....In a deep frying pan heat oil ...take one cut bread piece dip it in the batter ..(the batter should cover the bread piece) and fry in the oil ...cook till golden brown ...take out and serve with tea or coffee.... it is a wonderful snack for your kids .....try ...............

my cooking - Beef ulathiyathu

Beef ulathiyathu ( beef roast )....here Im using the Eastern Beef Ularthu Masala ...its there in super markets grab one .........

Ingredients
1. Beef 1kg washed and chopped
2. Turmeric powder 1/2tsp
3. Red chili powder 2tsp
4. Coriander powder 3tsp
5. 3 large onions finely sliced
6. Ginger (lemon size) finely sliced
7. Garlic 8nos. chopped
8. Green chili 8nos. sliced
9. Coriander seeds 1 tbsp washed and crushed
10.Dry red chili 6nos.
11.Turmeric powder 1tsp
12.Red chili powder 2tsp
13.Coriander powder 3tsp
14.Eastern Beef ularthu masala 3tsp (optional)
15.Pepper powder 1tsp
16.Oil 6tbsp
17.Salt to taste
18.Curry leaves 8nos.
19.Lemon juice (1 lemon)

                             Add 1- 4 ingredients in a pressure cooker mix well .......add salt ........and cook for 6-8 whistles ( no need to add any water ) ...Once your beef is ready and soft ........drain the exess water and keep the beef aside ..In a deep pan heat oil  splatter coriander seeds then dry red chili and curry leaves to it add onions and saute them till the onions become glassy appearance........ then to it add ginger garlic green chilies saute them for 1min............ then we need to add the masalas .lower the flame and add rest of the masalas to it saute it for another 2-3 mins...then add the boiled beef and mix them at a medium flame till the beef becomes dark brown in colour add salt if needed ...then add the lemon juice ...mix well and ready to serve

2. Kappa (Tapioca) Grated 2 cups
3. Coconut grated (1/2 of a coconut)

         This also very easy to make and I got this recipe from my aunt ....
         Squeeze all the juice from the kappa ( Tapioca )and put in a deep bowl.... to it add the rice powder.... mix it with your fingers ( to get the actual texture ) ..In a cup of water add necessary salt (water should stand little salty) now sprinkle water little by little and mix well ( with your fingers) Mix the powder till you find the powder gets into tiny balls (it should feel wet )...In between if you find the mix is salt enough add only plane water while you mix .............In a small bowl add coconut and sugar ..mix it well and keep aside...In a rice steamer boil water and using the top part of the rice steamer... place the filter and layer coconut first ( a thin layer is enough ) and then on top of the coconut layer the powder mix ( it should be thick ) do this procedure till it fills to the top close it and  then place it on the steamer let it cook for 5mins ..When you find the steam coming out....... your kappa poottu is ready..........

my cooking-onion carrot pakuvada

Tasty pakuvada..............

Ingredients
1. Maida 2cups full
2. 2 medium sized onion chopped
3. 4 green chilies chopped
4. 1 carrot grated
5. 1/2tsp gram masala
6. Salt to taste
7. Oil 

                   In a bowl add all the ingredients one by one and mix them gently with some water ....(the consistency of the batter should be thick)...keep the bowl aside and heat the oil in a deep frying pan or kadai and with the help of a spoon pour the maida mix spoon by spoon into the hot oil and fry till golden brown ....Have this hot pakuvada with some hot and sweet tomato sauce for snacks..

my cooking-beef fry

Beef fry................

Its a special beef fry ........... easy to make and can keep it refrigerated for 4-5 days .. reheat in a microwave and can have it with rice.....

Ingredients
1. 1kg beef cleaned, drained and chopped in small pieces
2. Coriander seeds washed and just crushed or grind it for a second(1 handful )
3. Dry red chili 15-20nos.( should remove the seed inside it )
4. Ginger 1 lemon size cut and smashed
5. Garlic  20-25nos. smashed
6. Green chilies 10nos smashed
7. Curry leaves 10nos.
8. Vinegar 3/4 of a cup
9. Turmeric powder 1tsp
10.Chili powder 2 & 1/2tsp ( if spice needed add 1/2 tsp more )
11. Salt to taste
12. Oil for frying

                    Take a deep pressure cooker to it mix beef with all the ingredients ( 2-11 ) mentioned above and cook it at high flame. After 1 whistle lower the flame and let it cook for 6-8 whistles...when done remove the lid and boil at high flame till the beef is dry and no water remains left in the cooker.( dont let the masala burn ...stir occasionally ). Then in a deep frying pan  heat oil and fry the boiled beef ( take the boiled beef little by little and fry them )till light brown. done .... You can keep it in an air tightner and keep it in your fridge...reheat in a microwave before use ...Try and let me know

Lemon juice with honey .....................

My husband likes this lemon juice and always asks for one glass.......... everyday...........

Ingredients
1. Juice of a lemon
2. Honey 2-3tbsp
3. 1 glass chilled soda

      Take a serving glass to it pour the ingredients 1 and 2 mix well when you find honey is really loose with the lemon juice then the honey is well mixed.... to it pour soda slowly and stir it slowly ....now your lemon juice with honey is ready.............try try 

Masala cola

It is a refreshing and a tasty juice .... I tasted this juice when I was in Kolkatha ...I and my hus was soo excited to taste this cola ....I think it is common in north India but new to south India ...........so try it........

Ingredients
1. Chat masala 1 tsp
2. Black salt 1/2 tsp
3. Juice of half a lemon
4.Chilled Coca Cola or Pepsi 1 glass

                    Take a serving glass to it put the ingredients 1,2,3 and to it pour the cola slowly only 1/4th of the glass ( or the juice will spill out and the masala will be out of the glass ) stir slowly to let the masala and the salt mixed ....then fill the cola slowly in the glass  ........done have a nice drink

my cooking - Nadan chicken roast

Nadan chicken roast........

This chicken curry is really nice to have with chapathies and puries but most of all it is tasty to have with Vegetable biriyani or plane rice.............

Ingredients:-
1. Chicken cut into small pieces 1kg
2. Oil for frying the chicken
3. 4 large onions sliced
4. Lemon size ginger sliced (may be little bit bigger sized lemon ginger)
5. Garlic 10-15 poda chopped
6. Green chilies 8nos. chopped
7. Curry leaves 10nos.
8. Turmeric powder 1tsp
9. Chili powder 4tsp
10. Coriander powder 3tsp
11.Garam masala 1-1&1/2 tsp
12.Chicken masala 3tsp
13.Pepper powder 1/2 tsp
14.Tomatoes chopped 4nos.
15.1 cup thick cocnut milk
16. Salt to taste

                   First we will have to marinate the chicken with 1/2tsp turmeric powder, 2tsp chili powder and salt. Fry the chicken in a deep frying pan ( be careful it should not be deeply fried ). Keep aside all the fried chicken. For making the masala we need to use the same oil used for frying ( if the oil is too much take only half ) into it add 2-7 ingredients together and saute till light brown....  meanwhile in a small bowl mix all the masalas ( 8-13 ingredients ) and when the onion is light brown in colour add these masalas and mix well....to it add chopped tomatoes and mix it and close it for 5mins at low flame . After 5 mins open the top and smash the tomatoes well and if you find oil clearly ,....add the fried chicken........ mix it well at high flame for about a min or 2 then to it add thick coconut milk .........let it boil and then close the top and simmer at low flame for 5-6 mins add salt to taste. again if you see oil forming on top your chicken is ready. The gravy must be thick.Try it ............................

Tomato side curry

This curry is also another less time consuming and at the same time tasty to have with chapathies, puris, kuboos, pathiri and also with bread .....kids will like it to have with chapathies ....specially if you have chapathies or kuboos left overs keep it in your fridge, next day you reheat it and send for snacks to school with this special tomato easy to make side curry..............

Ingredients:-
1. Tomato finely chopped 4nos.(medium size)
2. 1 medium size onion chopped
3. 1/2 lemon size ginger chopped
4. 6-8 pods of garlic chopped
5. Green chilies 3nos. chopped
6. Curry leaves 5-6nos.
7. Oil 3tbsp
8. Turmeric powder 1/2 tsp
9. Chili powder 1-1&1/2tsp
10. Coriander powder 1tsp
11.Garam masala 1tsp
12.Pepper powder 1/2tsp
13.Salt to taste
          In adeep pan heat oil to it add 2-6 ingredients together and saute it well till the onions become light brown colour, then add 8-12 ingredients again mix well for 1min then add the finely chopped tomatoes mix well add salt and keep it on low flame about 3min , smash the tomatoes and add little water if necessary and simmer at low flame for 5 min and then if you find oil on top layer ...yup your side curry is done.

This curry is very easy to make and requires very less ingredients as well as time ... I use to make this curry for my children to have with their rice for lunch at school ..kids do like this curry ...........

For this curry you need yogurt which is sweet not the sour one ..

Ingredients:-
1. Yogurt 2-3 cups
2. Water 2 cups
3. 1 large onion chopped
4. 5-6 garlic chopped
5. 1/2 lemon sized ginger chopped
6. Curry leaves 6-8nos.
7. Dry red chilies 4-5nos.
8. Mustard seeds 1/2tsp
9. Turmeric powder 1/2tsp
10.Chili powder 1tsp if spice needed add 1 and 1/2tsp
11.Oil 3-4tbsp
12.Salt to taste

         In a deep pan heat oil, to it splatter mustard seeds, dry red chili and curry leaves then to it add onions,garlic,ginger, when onions start to get light brown colour put the turmeric and red chili powder saute it well at low flame for 1 min then pour yogurt, mix gently ( do not  put the flame high ) to it add water to loosen the yogurt since it is very thick, mix gently add salt when the oil turns clear on top your curry is done. Try it for your kids, its less time consuming specially in the busy mornings.

my cooking-kappa(tapioca) with beef curry

Kappa puzhingiyadu with Erachi thenga kothu

Kappa (Tapioca) cut into halves, about 2-3inches long

Erachi thenga kothu-
1. Beef 1kg cut into small pieces washed and drained
2. Thenga kothu (coconut pieces)
3. 2 large onions thinly sliced
4. Ginger sliced (lemon size)
5. Garlic chopped 5-6 pods
6. Green chillies 5-6nos. chopped
7. Turmeric powder 1/2tsp
8. Chilly powder 2tsp
9. Coriander powder 4tsp
10. Garam masala 1 and 1/2 tsp
11.Pepper powder 1/2tsp
12.Meat masala 2 tsp (optional)
13.Oil 3-4tbsp
14 Curry leaves 10nos.
15.Salt to taste
              In a pressure cooker put beef and add 1/4tsp of turmeric powder,1tsp of chilli powder,2tsp of coriander powder,1tsp of meat masala and salt. Mix it well and cook for about 6 whistles. Open the lid and layer the tapioca(kappa) on top of the half cooked beef and again cook for another 2-4 whistles. Now the tapioca as well as the beef is cooked. Remove the lid and take out the cooked tapioca and place it in a serving dish. Heat a deep pan or a kadai pour oil, when its hot enough add onions,curry leaves,green chilies and mix till the onions get light  brown in colour then add ginger and garlic then to it add the rest of the masalas left balance including the pepper powder mix it well for a minute and to it add the coconut pieces when done add the boiled beef  mix it well and keep it on low fire for 2-5min. If  you see oil on top of your curry that means your dish is ready to be served. Add salt if needed. Done

              Have tapioca with this curry it will taste good.Try it out ..............
